HomeMade Hot Cocoa

In a large sauce pan mix 1/2c sugar and 1/3c unsweetened cocoa.
Add 1/2c water and whisk until well blended over medium heat.
Add 4c skim (or other of your choice) milk slowly, whisking to blend.  Cook over medium heat to desired temperature.
Remove from heat and add scant 1t vanilla, dash of cinnamon* or other flavor of choice.
Drink what you can, refrigerate the rest.  Reheat by mug in microwave, adding milk as needed.  For some reason, the cocoa gets stronger with time!

*Adjust to taste.  The original recipe called for 1/2c sugar & cocoa, but, at least with a cocoa like Ghiradelli's, that is way too much.

(Another tip I garnered from COOKING LIGHT is that adding coffee (instant) can bring out the flavor of chocolate while using less, or make cocoa more chocolate-like.)
