Tangy Parmesan Salad

cut iceberg lettuce
cut tomatoes
cut olives
cut mozzarella or cheddar cheese

toss together put in fridge

dressing:
1 Large thinly sliced yellow onion
3 or 4 bacon strips
1/4 tsp garlic powder
1/4 tsp onion salt
1/4 tsp season salt
1/8 tsp black pepper
1/2 cup white or apple vinegar
1/4 cup parmesan cheese

Fry bacon. Crumble and set aside bacon. Put grease in microwave bowl add all other ingredients to grease . Mix slightly. Microwave high for 45seconds to 1 minute. Mix again (for creamy style add 1/4 cup of mayonnaise after microwaving)

Just before serving toss salad with dressing and top with crumbled bacon bits

Crab Dip
1 (8 oz) pkg cream cheese
1 T. milk
6 1/2 oz crab meat
2 T minced onion
1/2 tsp salt
dash black pepper
1/3 cup slivered almonds

Mix all ingredients together and bake at 375?for 15 minutes. Serve with crackers or bread. You might have to make a double or triple batch. MMMMMMM, yummy!

BLT Salad

1 lb bacon (reserve 2 Tablespoons of bacon fat)
(save 2 strips for dressing, use the rest in the salad)
1/2 cup mayonnaise
juice of one whole lemon
4 (or more) cloves of garlic minced
2 Tablespoons of bacon fat
water
iceburg lettuce
romaine lettuce
3 ripe tomatoes

Mix both types of lettuce, chop tomatoes and place on top of lettuce, crumble bacon and place on top of tomatoes.

Dressing:
mix all ingredients well, add water until you get a thin runny dressing. The dressing is better if you let it sit overnight.

Pour dressing over salad. Enjoy!

Kelly's Homemade Chicken Soup

-Throw the carcass and leftover chicken in a large pot and fill with water until the carcass is covered.
-Add the following to the pot:
--one medium cooking onion cut into about 8 pieces and separated
--one clove of garlic cut in two
--2 packages OXO chicken bouillon
--about 4 whole cloves
--about 10 black pepper corns
--a couple stalks of celery cut into 1" pieces(or a tsp of celery salt
--1 1/2 tsp poultry seasoning
--1 bay leaf

-Let this simmer covered for about an hour or so.
-Drain the broth into a clean pot. You can take the chicken pieces out of the strainer, cool and chop it. Add to the broth if you like.
-Add fresh, frozen or canned vegetables to the broth. Use your faves. I usually add carrots and peas, but corn, beans and celery are a few I have used and liked.
-Add about 1/2 cup of rice or noodles and simmer until ready to eat! (20 minutes or so)

-If there is more broth than you can use for one meal, you can separate it and freeze. Add the rice or noodles only when you are ready to eat it!

Dough Boys Caesar Salad

Here's my favorite recipe for Caesar Salad. I got this from a restaurant that closed. My mom went and asked for the recipe so we wouldn't have to go without this awesome salad!!

1/2 cup Olive Oil
1 Garlic (crushed)
1/2 tsp Salt
1/2 tsp Pepper
1/2 tsp Dry Mustard
3 Anchovies (chopped)
2 tsp Worcestershire Sauce
2 tsp Lemon Juice
1 Egg

* Blend all together with a Braun mixer. Mix into the following:

1 Head Romaine Lettuce
Parmesan Cheese
Mushrooms
Bacon Bits

Top with croutons and serve!

Serves 4 people
